Kale Salad with Mango Vinaigrette


  • 2 cloves garlic, minced
  • 2 tablespoons freshly chopped cilantro
  • 2 tablespoons white vinegar
  • 1 tablespoon agave nectar
  • Salt and pepper
  • 1/4 cup olive oil
  • 1 ripe mango, peeled, seeded and finely diced
  • 1 bunch dinosaur kale, stems removed and shredded


Add the garlic, cilantro, white vinegar, agave, salt and pepper to a bowl. Whisk in the olive oil until combined. Add mango. Taste and adjust seasoning as needed. Add the kale and toss to coat in the dressing.

Set aside to soften before serving, about 20 minutes.
